Ingredients:

  • Whole wheat bread 4 oz.
  • Cottage cheese 2 tbsp.
  • Sun-dried tomatoes 2 tbsp.
  • Spinach 1/2 cup
  • Egg 1 pc
  • Salt, pepper to taste

Macronutrients:

  • Protein: ~20 g
  • Fat: ~17 g
  • Carbs: ~58 g

Calories: ~476 kcal

Instructions:

  1. Toast the whole wheat bread in a frying pan or toaster.
  2. Chop half of the sun-dried tomatoes into small pieces and mix with the cottage cheese.
  3. Boil the hard-boiled egg (about 8-10 minutes), then peel and slice.
  4. Spread the mixture on the bread slices. Place the remaining sun-dried tomatoes and fresh spinach on top of the hard-boiled egg. Cover the top with another slice of bread and serve....
