Ingredients:
- Chicken filet 5 oz.
- Basmati rice 1/4 cup
- Eggplant 1/2 cup
- Sweet peppers 1/2 cup
- Tomatoes in their own juice 1/4 cup
- Garlic 1 pc
- Olive oil 1 tsp.
- Salt, pepper to taste
Macronutrients:
- Protein: ~40 g

Instructions:
- Season the chicken filets with salt and pepper. Grill for 3 to 5 minutes on each side.
- Cook the rice according to the directions on the packaging (around 15 minutes).
- Dice the eggplant and peppers.
- Heat 1 tsp. of oil in a pan with the garlic, and fry the eggplant until soft (around 5 minutes). Add the peppers and cook for another 3 minutes.
- Pour in the tomatoes in their own juice, season with salt and pepper, and braise for 5-7 minutes.
