Ingredients:

  • Chicken filet 5 oz.
  • Basmati rice 1/4 cup
  • Eggplant 1/2 cup
  • Sweet peppers 1/2 cup
  • Tomatoes in their own juice 1/4 cup
  • Garlic 1 pc
  • Olive oil 1 tsp.
  • Salt, pepper to taste

Macronutrients:

  • Protein: ~40 g
  • Fat: ~11 g
  • Carbs: ~49 g
  • Calories: ~457

Instructions:

  • Season the chicken filets with salt and pepper. Grill for 3 to 5 minutes on each side.
  • Cook the rice according to the directions on the packaging (around 15 minutes).
  • Dice the eggplant and peppers.
  • Heat 1 tsp. of oil in a pan with the garlic, and fry the eggplant until soft (around 5 minutes). Add the peppers and cook for another 3 minutes.
  • Pour in the tomatoes in their own juice, season with salt and pepper, and braise for 5-7 minutes.
