Ingredients:
- Turkey filet 5 oz.
- Whole grain pasta 1/3 cup
- Parsnips (or celery) 1/3 cup
- Carrots 1/3 cup
- Broccoli 1/2 cup
- Olive oil 2 tsp.
- Dijon mustard 1 tsp.
- Lemon juice 1 tsp.
- Salt, pepper to taste

- Fat: ~13 g
- Carbs: ~62 g
Calories: ~532 kcal
Instructions:
- Boil the pasta until cooked according to the instructions on the package and then drain.
- Dice the turkey filet and pan fry until golden. Add the parsnips, carrots, and broccoli, and simmer for 15 minutes until the vegetables are soft.
- For the dressing, mix together the olive oil, mustard, and lemon juice.
