Ingredients:

  • Turkey filet 5 oz.
  • Whole grain pasta 1/3 cup
  • Parsnips (or celery) 1/3 cup
  • Carrots 1/3 cup
  • Broccoli 1/2 cup
  • Olive oil 2 tsp.
  • Dijon mustard 1 tsp.
  • Lemon juice 1 tsp.
  • Salt, pepper to taste

Macronutrients:

  • Protein: ~43 g
  • Fat: ~13 g
  • Carbs: ~62 g

Calories: ~532 kcal

Instructions:

  1. Boil the pasta until cooked according to the instructions on the package and then drain.
  2. Dice the turkey filet and pan fry until golden. Add the parsnips, carrots, and broccoli, and simmer for 15 minutes until the vegetables are soft.
  3. For the dressing, mix together the olive oil, mustard, and lemon juice.
  4. Serve the turkey with the vegetables and pasta, drizzled with the dressing....
