Ingredients:

  • 6 oz (170 g) chicken breast (280 kcal)
  • 1 cup Brussels sprouts, halved (40 kcal)
  • 1/2 cup cooked quinoa (110 kcal)
  • 1 tbsp olive oil (120 kcal)
  • Salt, pepper, and herbs to taste

Calories: ~550 kcal.

Macronutrients: protein: ~50 g, fat: ~22 g, carbs: ~38 g.

Instructions:

  1. Preheat your oven to 400 °F (200 °C). Toss the Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until crispy.
  2. While the Brussels sprouts are roasting, season the chicken breast with salt, pepper, and your favorite herbs. Bake for 20–25 minutes until fully cooked.
  3. Prepare the quinoa according to package instructions.
