Ingredients:
- 6 oz (170 g) chicken breast (280 kcal)
- 1 cup Brussels sprouts, halved (40 kcal)
- 1/2 cup cooked quinoa (110 kcal)
- 1 tbsp olive oil (120 kcal)
- Salt, pepper, and herbs to taste
Calories: ~550 kcal.
Macronutrients: protein: ~50 g, fat: ~22 g, carbs: ~38 g.
Instructions:
- Preheat your oven to 400 °F (200 °C). Toss the Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until crispy.
- While the Brussels sprouts are roasting, season the chicken breast with salt, pepper, and your favorite herbs. Bake for 20–25 minutes until fully cooked.
- Prepare the quinoa according to package instructions.
