Ingredients:
- 6 oz (170 g) salmon fillet (340 kcal)
- 1.5 cups steamed broccoli (80 kcal)
- 2/3 cup cooked quinoa (150 kcal)
- 1 tsp olive oil (40 kcal)
- Salt and pepper to taste
- Lemon wedges for serving
Calories: ~610 kcal
Macronutrients: protein: ~45 g, fat: ~29 g, carbs: ~45 g.
Instructions:
- Cook the Quinoa: Rinse the quinoa and cook it according to the package directions, using a 2:1 ratio of water to quinoa. Adjust the portion size to make 2/3 cup when cooked.
- Bake the Salmon: Preheat your oven to 375 °F. Place the salmon on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 12–15 minutes, or until the salmon is cooked through.
