Ingredients:

  • 1/2 cup dry lentils (175 kcal)
  • 1 carrot, diced (25 kcal)
  • 1 celery stalk, diced (10 kcal)
  • 1/2 onion, diced (20 kcal)
  • 2 cups vegetable broth (20 kcal)
  • 1 slice whole grain bread (80 kcal)
  • 1 tsp olive oil (40 kcal)
  • Salt, pepper, and herbs to taste

Calories: ~370 kcal.

Macronutrients: protein: ~19 g, fat: ~8 g, carbs: ~55 g.

Instructions:

  1. In a pot, heat the olive oil over a medium heat. Add the diced onion, carrot, and celery, and sauté until softened.
  2. Add the dry lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until lentils are tender.
  3. Season the soup with salt, pepper, and herbs to taste. Serve with a slice of whole grain bread on the side....
