Ingredients:

  • 1/2 cup cooked quinoa (110 kcal)
  • 1/2 cup black beans (110 kcal)
  • 1/2 cup corn kernels (70 kcal)
  • 1/2 avocado, diced (120 kcal)
  • 1 tbsp olive oil (120 kcal)
  • Juice of 1 lime (10 kcal)
  • Salt and pepper to taste

Calories: ~540 kcal.

Macronutrients: protein: ~14 g, fat: ~27 g, carbs: ~62 g.

Instructions:

  1. Rinse and cook the quinoa according to the package directions.
  2. In a large bowl, combine the cooked quinoa, black beans, corn, and diced avocado.
  3. Drizzle the olive oil and lime juice over the salad, then toss to combine. Season with salt and pepper to taste....
