- Chicken breast 4 oz.
- Quinoa 1/4 cup
- Zucchini 1/3 cup
- Broccoli 1 cup
- Carrots 1/4 cup
- Olive oil 1 tsp.
- Lemon juice 1 tsp.
- Paprika 1/2 tsp.
- Salt, pepper to taste

Instructions:
- Preheat the oven to 375 °F (190 °C).
- Rub the chicken breast with salt, pepper and paprika. Dice the zucchini, cut the carrots into strips, and cut the broccoli into small florets.
- Place the chicken, zucchini, broccoli, and carrots on a baking tray. Drizzle everything with olive oil, salt, and lightly pepper. Bake for 20-25 minutes until the chicken is cooked through and vegetables are soft.
