Ingredients:

  • Chicken breast 4 oz.
  • Quinoa 1/4 cup
  • Zucchini 1/3 cup
  • Broccoli 1 cup
  • Carrots 1/4 cup
  • Olive oil 1 tsp.
  • Lemon juice 1 tsp.
  • Paprika 1/2 tsp.
  • Salt, pepper to taste

Instructions:

  • Preheat the oven to 375 °F (190 °C).
  • Rub the chicken breast with salt, pepper and paprika. Dice the zucchini, cut the carrots into strips, and cut the broccoli into small florets.
  • Place the chicken, zucchini, broccoli, and carrots on a baking tray. Drizzle everything with olive oil, salt, and lightly pepper. Bake for 20-25 minutes until the chicken is cooked through and vegetables are soft.
