Ingredients:
- 1 cup canned chickpeas, drained and rinsed (180 kcal)
- 1/2 cup cucumber, diced (10 kcal)
- 1/2 cup cherry tomatoes, halved (15 kcal)
- 1 oz feta cheese, crumbled (80 kcal)
- 1 tbsp olive oil (120 kcal)
- Juice of 1 lemon (10 kcal)
- Salt and pepper to taste
Calories: ~415 kcal.
Macronutrients: protein: ~14 g, fat: ~21 g, carbs: ~40 g.
Instructions:
- In a large bowl, combine the chickpeas, cucumber, and cherry tomatoes.
- Add the crumbled feta cheese, olive oil, and lemon juice. Toss to combine.
