Ingredients:

  • 1 cup canned chickpeas, drained and rinsed (180 kcal)
  • 1/2 cup cucumber, diced (10 kcal)
  • 1/2 cup cherry tomatoes, halved (15 kcal)
  • 1 oz feta cheese, crumbled (80 kcal)
  • 1 tbsp olive oil (120 kcal)
  • Juice of 1 lemon (10 kcal)
  • Salt and pepper to taste

Calories: ~415 kcal.

Macronutrients: protein: ~14 g, fat: ~21 g, carbs: ~40 g.

Instructions:

  1. In a large bowl, combine the chickpeas, cucumber, and cherry tomatoes.
  2. Add the crumbled feta cheese, olive oil, and lemon juice. Toss to combine.
