Ingredients:

  • Tortilla 1 pc
  • Chicken filet 3 oz
  • Red beans (canned) 1/4 cup
  • Cheddar cheese 1 oz.
  • Tomato sauce (salsa) 1 tbsp.
  • Green onions 1 tbsp.
  • Olive oil 1 tbsp.
  • Salt, pepper to taste

Macronutrients: Protein: ~35 g Fat: ~22 g Carbs: ~42 g Calories: ~513

Instructions:

  • Pan-fry the chicken fillets (cut into small pieces) with 1 tbsp of olive oil until cooked through.
  • Mash the beans with a fork to create a thick texture.
  • Place the beans, chicken, grated cheese, and some salsa on half of the tortilla. Add finely chopped green onions if desired. Fold the tortilla in half.
  • Place the quesadilla on a dry skillet and fry for 2-3 minutes on each side over a medium heat, until the cheese is melted and the tortilla is crispy. ...
