Ingredients:

  • Chicken filet 3 oz.
  • Quinoa 1/4 cup
  • Cucumber 1/3 cup
  • Tomatoes 1/3 cup
  • Sweet peppers 1/3 cup
  • Carrots 1/3 cup
  • Olive oil 1 tbsp.
  • Wine vinegar 1 tbsp.
  • Mint 1 tbsp.
  • Salt, pepper to taste

Macronutrients: Protein: ~32 g Fat: ~14 g Carbs: ~50 g Calories: ~473 kcal

Instructions:

  • Cook the quinoa according to the instructions on the package (around 12-15 minutes)
  • Fry the chicken fillets in a pan with a little olive oil until golden, about 5 minutes on each side. Cut into slices or cubes.
  • Dice the cucumber, tomato, bell pepper, and carrot into small cubes.
  • Mix the cooked quinoa, vegetables, and chicken together.
