Ingredients:

  • Chicken filet 5 oz.
  • Canned chickpeas 1/4 cup
  • Coconut milk 1/4 cup
  • Carrots 1/3 cup
  • Onion 1/2 pc
  • Sweet pepper 1/2 pc
  • Curry 1 tbsp.
  • Turmeric 1/2 tbsp.
  • Olive oil 1 tbsp.
  • Basmati rice 1/4 cup
  • Salt, pepper to taste

Macronutrients: Protein: ~24 g Fat: ~44 g Carbs: ~66 g Calories: ~670 kcal

Instructions:

  • Cook the rice according to the instructions on the packaging.
  • Cut the chicken filets into small pieces and fry for 5-7 minutes until golden in a deep frying pan.
  • Dice the carrots and sweet peppers, and finely chop the onion.
  • Add the onions to the chicken and fry for 3 minutes. Then add the potatoes and carrots, and cook for another 5 minutes.
